The safest thing you can do is play safe and get farm when possible, as you mentioned. Jax scales really well with items and he's a lot stronger after level 6 when you can trade with the third hit of Master-At-Arms.

If he tries to trade with you, you have to try to avoid his Decimate or Apprehend with your Leap Strike OR if you have the minion advantage, jump onto him and use your Counter Strike to win the trade. If his Q doesn't hit you with the blade portion it's pretty negligible.

Darius matchups are often tough for melees because picking a bad time to fight him can result in you getting pulled back in and taking a ton of damage. Keep in mind that sometimes playing safe can win you the lane if Darius pushes and gets ganked by your jungler.

Psi summed it up pretty well; Jax starts beating darius out of lane once Jax gets Master-At-Arms. Avoid taking the full damage from Decimate by using Leap Strike, and be sure to Counter Strike darius' AA + Crippling Strike.

You can't win against Darius without giving up CS. At least not with Jax and against a decent Darius. Jax outscales Darius pretty hard, so your best bet is trying to farm whatever you can whenever he pushes and hope that you don't give him an early kill. If you know how to properly farm undertower and your enemy is pushing too much (common around gold elo and easier with Darius) you may keep up in farm.

You might want to max your Q to use it as an escape more often but I'm not 100% sure if maxing W and going for the mid-game outdueling is better. Also starting with a defensive HP+Armor item might be the way to go if you can't push an advantage in lane.

Three options... Kiting with Frozen Mallet (his mobility is ****), Long-Range Burst damage... and heavy armor builds. Just don't trade blows with him for a long duration or he can dunk you after 5 Hemorrhage stacks.
